· 200g. of tiger nuts
· 150 g. of sugar
· 1 l. of water
· Utensils, the only thing we need is a mixer, a sieve that you can use with a clean gauze and a jug to serve it.
Wash the tiger nuts in clean water several times to take out any soil from them. Put them to soak 6-8hours in order that they are hydrated.
As soon as they have hydrated, dispose of the water, wash them again and place them in a deep container together with sugar.
Take the mixer, and switch to maximum power to crush the mixture, until the tiger nuts pulverize; simultaneously add water gently (little by little). Pass the mixture through the sieve and press well to extract all the juice, and that's it. Now you just need to let this gods' nectar cool down, the colder the better.
For diabetics and those worried by calories, there is no disadvantage in replacing the sugar with saccharin, or simply leave them out altogether.
